The Culinary Dietitian will be an integral part of the delivery of safe, culturally competent, quality food and nutrition services. Be the administrator of the Food Management Software.  Conduct nutrient analysis, data collection, and oversee foodservice sanitation and food safety.   Plan and implement nutritional programs and promote health and wellness within the campus community.  This includes providing nutrition and allergen information for on-campus dining locations and developing communication including materials to support nutritional programming.

 

Key Responsibilities 

Recipe Development and Nutritional Analysis
- Works with chefs to develop recipes based on specific nutrition guidelines and/or ingredients.
- Ensures recipe accuracy of measurements and instructions, quality, flavor, yield, nutrition information, and other specified criteria.
- Ensures accuracy of allergens in ingredients and ultimately final recipes. Provides allergy- and health-related training to all managers, chefs, and front-line associates.
- Analyzes menus and recipes for nutritional adequacy.
- Develops menus and/or meal plans to meet specific nutrition guidelines.
- Stays current on Food trends in higher education and associated populations. Regularly report on trends to the Dining leadership.
- Provides allergy- and health-related training to all managers, chefs, and front-line associates.

Administration of the Food Management and Nutrition software
- Initial responsibility is the implementation of new Menu Management Software.
- Ensure that the information provided on the website and digital menu boards are accurate
- Oversees the campus food labeling program and conducts regular audits to ensure all products are labeled correctly and meet all local and federal regulations.
- Periodic auditing of food management process to ensure that the dining team is following the recipes and portioning accurately
- Provide training to Chefs and Managers on the food management software

 

Nutrition Ambassador of Dining Service
- Assists the Registered Dietitians in spreading nutrition education and awareness through educational tabling events, cooking demos, and campaigns related to international and national programs such as National Nutrition Month.
- Works with Registered Dietitians to ensure students’ dietary needs are being accommodated and arranges for specially prepared meals, - purchase of prepackaged foods or sourcing special requests when the daily menu offerings do not meet their needs.
- Stays current on health and wellness trends and regularly report on trends to the Dining leadership.
- Provides allergy- and health-related training to all managers, chefs, and front-line associates.

Food Safety Audit

- Conducts bi-weekly food safety audits in all the dining locations

Requirements

  • Bachelor’s degree in food science, culinary arts, clinical nutrition, food and nutrition, or related area, granted from a U.S. regionally accredited college or university.
  • Higher education dining experience
  • Registered Dietitian with active registration by the Commission on Dietetic Registration of the American Dietetic Association OR certified as a Dietetic Technician (DTR), Registered by the Commission on Dietetic Registration (CDR) of the Academy of Nutrition and Dietetics (AND)
