Associate Director of Dining Services - Catering

Davidson College Dining services is looking for an Associate of Director of Dining - Catering. The Associate Director will be responsible for the overall operation of the Catering Department. They are hands on and accountable for all aspects of guest service, food quality, cleanliness, safety and sanitation, production, labor and ensuring all administrative and accounting responsibilities are completed according to policy.   Successful candidates are true people champions, have a passion for fresh, quality, food, and a dedication to providing the highest level of guest service.

Strategic planning, coordinating, execution, follow up and approval of all Catering Department events, promotions (marketing) and sales. Establish a standard of excellence in menus, food and service for the department. Work with culinary staff to feature menus that are creative, current, flavorful and cost effective. Design and execute memorable displays, buffets, and floral arrangements. Must be present for every Presidential and VIP events.

Personnel Management-responsibilities include the daily performance oversight of employees which includes yet is not exclusive of the following tasks of recruitment, employee performance reviews, training, mentoring, progressive discipline and termination. Oversight of the development of training procedures and suggesting new departmental policies and procedures with regards to employees. Teamwork is a top priority. The desire and initiative to work and bring people together for the common good of the college and the department.

Financial Management-Financial tracking of Catering events with full responsibility for the efficient and profitable performance of all. Oversight of ordering, food and labor costs, direct costs, inventory control, product pricing, equipment and small ware purchases and maintenance, Development and compliance of yearly budgets. Management of cash flow, control and efficient bookkeeping and cash handling procedures.

Develop new business opportunities and facilitate return business to achieve revenue goals. Plan proposals for clients that increase sales and fulfill the customer’s needs.

Secure a safe and sanitary environment for our guests and employees. Monitor the sanitation and cleanliness of all foods storage and service areas, coolers freezers and dry storage. Maintain current Servsafe Food Manager, Servsafe Allergens and Servsafe Alcohol certifications.

Facility and Equipment Planning and Maintenance-Make sure all equipment is properly, cleaned, serviced, maintained, organized and replaced when needed. Facility includes well kept and safe conditions of floors, walls, furnishings, stairways, hallways, back dock and grounds outside the immediate facilities. Responsible for all Catering vehicles and Golf Carts.

Policy and Procedures-Administer the compliance of all college and departmental policies and procedures. Recommend corrections and or changes to current policies for the well being of our employees, customers and community.

Community Liaison - Primary contact and ambassador for Catering Operations in the Community. Responsible for maintaining positive relations with students, parents, faculty, staff alumni and campus visitors. Must be friendly and caring and work to build a strong customer base built on good will and the civility of Dining.

Other Duties as assigned. 

 

Minimum Qualifications :

Bachelor's Degree- Preferably in Restaurant, Culinary or Hospitality Management.
Requires at least 4 years experience in managing the Catering operation of College / University, Hotels or Country Clubs.

Valid Drivers License

Preferred Qualifications:

Catering experience is required
Strong leadership skills
Excellent communication skills
Experience in Flower arrangement, Display and presentation of Buffets

Ability to drive a box truck and Catering van

Must be able to lift 50 pounds. Willingness to work any hours needed including evenings, weekends and holidays. Work in an industrial kitchen with heavy and dangerous equipment.
