Sous Chef

The Sous chef is responsible for assisting the chef with all food production, including coordinating and overseeing food production and catered events when necessary. use sanitation knowledge to handle food and clean the kitchen properly. Researches and develops new recipes, and advises the chef on logistical, procedural, and staffing issues, helping to implement departmental changes.

Duties:

Production and fabrication of food for catered events and dining locations including butchery, grilling, sautéing, sauce & soup making, salad and cold food preparation, artistic tray production, and plate presentation design.

Execution of events, assisting the chefs with on-site catered events, plating all courses, working action stations for buffets and ensuring proper storage of food.

Keeping the kitchen clean and sanitized through daily cleaning, power washing the floors, and deep cleaning the hoods, ovens, stoves, grill, refrigerators and hot boxes.

Menu research & development including identifying current market trends, researching current cuisine and developing new recipes.

Pay:

Davidson College Dining Services recognizes that evening and weekend hours can be more challenging for employees for a host of reasons, including being able to spend time with family.  Therefore Dining Services has established a differential pay program for hours worked at those times.            

  • Monday-Friday, any hours worked between 6 pm and 9 pm will receive $2 additional pay.
  • Saturday and Sunday, all hours up to 9 pm will receive $2 additional pay.
  • 7 days a week, any hours worked after 9 pm will receive $5 additional pay.

Requirements:

HS diploma or GED is required.  Three year's of experience. Servsafe Manager certification.  Volume cooking, fine dining, banquet and catering experience is preferred.  Must be knowledgeable in all areas of the kitchen including: volume cooking, baking, grilling, sautéing, soup & sauces, knife skills, safety & sanitation, banquets, etc.. Must be able to read and follow a recipe properly.  Must be able to lift 50lbs. Must be able to stand on your feet for long periods of time. Must be able to work quickly, efficiently and neatly, and be able to monitor more than one thing at a time.
